The grapes for our Pallianum are selected solely from the excellent Ponticello vineyard, located nearby the winery’s headquarters.
The plot, adjacent to the stripe of land on which the Tiber river used to flow in ancient times, is composed of alluvial soil – an ideal substratum to allow a most authentic expression of this variety’s characteristics.

Our team wholeheartedly cares for the vineyard from the very first phenological stages, ensuring that the balance between plant growth and fruit production is respected at all times.

HarvestLate September - early October.

Vinification The grapes are vinified at a controlled temperature ranging between 25° and 28°C. Maceration lasts 12-15 days, during which manual “punch down” (the breaking of the cap of grape skins that forms over fermenting red wine) is regularly performed.

Ageing and maturationAfter vinification, the wine is transferred into small French oak casks, where it is kept for 12 months. The last step is 5-6 months of bottle-ageing in our thermoregulated cellars (15-16°C).

ColourIntense ruby red with flashes of violet.

NoseExtremely varied, with hints of red berries and ripe plum, herbaceous nuances, and aromas of tobacco and vanilla.

TasteFull and round, rich in soft tannins, enveloping the palate and lingering pleasantly on the tongue.

Food pairing Grilled meat, juicy and indulgent dishes, aged cheese.
