Thybris was born from an encounter with the Sangiovese grapes planted in the vineyard overlooking Corbara Lake. When the oenological team came upon the healthy bunches, it felt the mission to cultivate their extraordinary characteristics and promote the red wine identity of this gifted area. The name is a tribute to the vineyard’s proximity to the Tiber river, so important in history and so decisive for the winery’s viticultural choices.

VinificationThe vinification process takes place in stainless steel vats, where the grapes are kept at controlled temperature of 25°-28°C. Maceration lasts 15-18 days, during which manual “punch down” (the breaking of the cap of grape skins that forms over fermenting red wine) is regularly carried out.

Ageing and maturationAfter vinification, the wine is transferred into French oak casks, where it kept to age for 12 months. The process is completed with 5 to 6 months of bottle-ageing.

NoseScent of ripe red fruits with hints of spices, coffee, vanilla, plum, violet, chestnut, and tobacco.

TasteRound and full to the palate, with smooth tannins and a long finish.

Food pairing Salami, grilled meat, juicy roasts, aged cheese.
