The wine cellar
The winery is equipped with a modern wine cellar designed to support the “precision winemaking” method while ensuring utmost energy efficiency, as an act of respect to the environment.

HARVEST

When the harvest season approaches, the grapes are monitored with the utmost care, so that they may be collected only when perfectly ripe – not before, not after. The harvest takes place in the cooler hours of the day, so as to avoid early fermentation. Our team picks only the best bunches, further selected once they reach the wine cellar, before processing.
VINIFICATION
Castello di Corbara uses state-of-the-art technology to support an otherwise extremely simple vinification method, whose main aim is to preserve the high quality of the grapes and highlight each variety’s peculiar features. The grapes are harvested and vinified separately according to variety and vineyard of origin, and only joined in the final blends shortly before bottling.

Lastly, the winery is the proud owner of a wine-ageing room, a space with strictly monitored temperature and humidity where the precious juice from the oldest vineyards rests in fine wooden casks. Thanks to the careful selection of precious oak wood of the most adequate toasting level and to the well-informed choice of the best ageing period for each variety, Castello di Corbara brings forth beautiful, balanced wines, in which all organoleptic sensations are in perfect harmony.
