The vineyard is located on a hillside, at 250 m above sea level, with a south/southwesterly exposure. The soil is alluvial, loose and rich in mineral particles; the ideal substratum to allow a most authentic expression of this variety’s characteristics.
Calistri is the ultimate expression of the Sangiovese grapes planted by the local land owners in the 1970s, following their keen intuition and ensuing rigorous land studies. Calistri grapes thus originate in the oldest vineyard of the estate, and are only harvested by hand by carefully selecting the best bunches. The outcome is this extraordinary brew of pure Sangiovese.
The grapes are vinified at a controlled temperature ranging between 25° and 28°C. The maceration phase lasts 15 to 18 days. After the first fermentation is completed, the second (malolactic) fermentation takes place in 225-liter French oak casks, where the wine is kept for 16-18 months. It is then bottle-aged in our thermoregulated cellars (15°-16°C) for 7-9 months.
Rich ruby red in colour, the nose is of violets and tobacco, with tones of sweet liquorice. Full and round to the palate, softly tannic; enveloping and balanced, with a lingering aftertaste.
Wonderful with flavourful, juicy dishes, especially steak and aged cheese.
