We vinify the harvested grapes at a controlled temperature between 25°-28°C. The maceration phase with the grape skins lasts 15-18 days. After this phase, the evolution occurs in 500-liter French oak barrels for 16 months.
The wine finds its perfect match with succulent dishes, game and aged cheeses.
The color is deep red, and the nose has aromas of violets, tobacco, dark-fleshed fruits, and sweet licorice. The taste is round with soft enveloping tannins and hints of plum, black cherry, and dark spices. The wine, enveloping and balanced with a lingering aftertaste, finds its perfect match with succulent dishes, game meat, and aged cheeses.
100% Merlot.
We select the grapes from a specific vineyard known in ancient times as “Villa De Coronis”, today known as “Podere Corone” vineyard on a surface of 5 hectares. The harvesting takes place during the first and second decade of September, with the selection of the best bunches. The production never exceeds 40 quintals of grapes per hectare. We produce this wine in a very limited number of bottles and place it on the market after aging for 7-9 months.
The vines grow on a gentle hillside at 300 meters above sea level. The south, southwest orientation ensures maximum exposure to sunlight. The soil is medium-textured with the presence of Pliocene skeleton, which gives the wine a marked mineral taste.
