Vinification

The grapes are brought to our thermoregulated cellar, so the juice may rest in steel containers for about 15 days and initiate fermentation. Once the first (ethanol) fermentation has taken place, malolactic fermentation ensues; then, a larger portion of the wine is transferred into French oak barrels and a smaller one to Slavonian barrels. They will both be kept in the barrels for 12 months, to evolve and refine. The process is completed with 5 to 6 months of bottle-aging.

This perfect food combination with this wine is grilled/roasted meat and firm aged cheese.

Sensorial analysis

The color is a rich ruby red, and the scent a captivating aroma of ripe fruit enriched by tones of coffee and vanilla and hints of plum, violet, chestnut, and tobacco. Softly tannic, enveloping, full, and round to the taste.

Grapes

This blend contains at the very least 85% of Sangiovese, the flagship red grape variety of the estate, accompanied by small amounts of Cabernet Sauvignon and Merlot (each vintage varies in proportions). The harvest, usually taking place in late September/early October, is done by individual vineyard and variety, with our team selecting only the juiciest grapes of each.

Type of soil

The plot is located on the northeastern side of the estate, at an altitude of 200 meters above sea level. Exposure is south/southwesterly, and soil texture ranges from medium to loose.
