Type of soil

The Grechetto vines grow on the western side of the estate, at an altitude of about 230 m above sea level. The soils are of Pliocene origin and characterised by clay and silt of good porosity. Fluvial deposits are also found.

Grape Variety

Castello di Corbara has always believed in the potential of Grechetto grapes, and has thus produced this wine in purity since the beginnings. Over the years, the local Grechetto biotype has been reproduced and transplanted from the 50-year-old vineyards, in order to preserve its unique characteristics.

Vinification

The vinification process takes place in stainless steel vats, in our thermoregulated cellar (15°-18°C). Once vinification is complete, the wine is kept on lees for two months, so it develops flavour and structure. After about two months of bottle- ageing, the wine is ready for the market.

Sensory Evaluation

Straw yellow colour with pale green reflections; delicate scent of fruit. Moderately acidic to the palate, with a fine fruity aftertaste.

Food pairing

Wonderful matches with this wine are cured meats, fried snacks, savoury pies, and delicate flavours like fresh cheese and white meat.

Vinification

The vinification process takes place in stainless steel vats, in our thermoregulated cellar (15°-18°C). Once vinification is complete, the wine is kept on lees for two months, so it develops flavour and structure. After about two months of bottle- ageing, the wine is ready for the market.
