The grapes are placed in stainless steel tanks, divided by variety and degree of ripeness, to undergo the vinification process (ethanol fermentation takes around 1 month). After vinification is complete, the wine is kept in contact with the fine lees so it may develop its characteristic aromas. It is then racked, blended, and bottle-aged for about 2 months before being released on the market.
The perfect match for this wine are savory pies, fried bites, fresh cheese, white meat, and delicate dishes in general.
The color is a delicate straw yellow. Elegant floral/fruity nose, with fresh tones of white peach and apricot, and a delightfully aromatic taste of balanced acidity.
As per DOC regulations, this is a blend of several grapes – most notably the quintessentially local Grechetto and Malvasia grapes. The vineyard is carefully monitored and cared for during each phenological phase, with an eye to achieving a limited production of utmost quality. Each grape variety is harvested separately when it has reached the ideal degree of ripeness, usually in mid-September.
The vineyard dedicated to our Orvieto DOC is located on the western side of the estate, at an altitude of about 200 meters above sea level, and enjoys excellent south/southwesterly exposure. The soil, of Pliocene origin, is rich in clay, with a strong presence of silt.
