Vinification

The grapes are placed in stainless steel tanks, divided by variety and degree of ripeness, to undergo the vinification process (ethanol fermentation takes around 1 month). After vinification is complete, the wine is kept in contact with the fine lees so it may develop its characteristic aromas. It is then racked, blended, and bottle-aged for about 2 months before being released on the market.

Food pairings

The perfect match for this wine are savory pies, fried bites, fresh cheese, white meat, and delicate dishes in general.

Sensorial analysis

The color is a delicate straw yellow. Elegant floral/fruity nose, with fresh tones of white peach and apricot, and a delightfully aromatic taste of balanced acidity.

Grapes

As per DOC regulations, this is a blend of several grapes – most notably the quintessentially local Grechetto and Malvasia grapes. The vineyard is carefully monitored and cared for during each phenological phase, with an eye to achieving a limited production of utmost quality. Each grape variety is harvested separately when it has reached the ideal degree of ripeness, usually in mid-September.

Type of soil

The vineyard dedicated to our Orvieto DOC is ‌located on the western side of the estate, at an altitude of about 200 meters above sea level, and enjoys excellent south/southwesterly exposure. The soil, of Pliocene origin, is rich in clay, with a strong presence of silt.
